Red Nose Day Cupcakes

Ingredients

For the cake

  • 100g self-raising flour, sifted
  • 100g butter, softened
  • 100g caster sugar
  • 2 medium eggs

 

For the toppings

  • 75g butter, softened
  • 150g icing sugar, sifted
  • 12 Maltesers

Method

1. For the cakes: preheat the oven to 180C/Fan 160C/Gas 4 and place 12 Comic Relief Cup Cake Cases in a cake tray.

2. Beat together the flour, butter, sugar and eggs using an electric mixer for about 2 minutes, until pale. Divide between the cake cases and bake for 18-20 minutes, until well risen and golden. Remove from the oven, transfer to a wire rack and leave to cool completely.

3. For the topping: Beat together the butter and icing sugar until well blended. Spoon into a piping bag fitted with a star-shaped nozzle and pipe a star on each cake. Place a Maltesers ball on each cake to decorate and serve.
